Artisanal Pastry and Bread Baker

A fantastic opportunity has arisen for a talented and ambitious artisanal Baker to join our Bakery in London! The High Llama is a new bakery and deli in London offering high-quality, house-made items served dine-in and to-go, reflecting a Mediterranean flavour and lifestyle. An épicerie fine haut de gamme.

We are looking for artisanal, experienced bakers to produce a wide range of sourdough bread, pastries, cakes, and Lebanese baked goods.

You will be a talented individual with at least three years of experience, including proven skills within a quality bakery team, advanced lamination skills, and confidence working with and maintaining sourdough starters. You will create a variety of artisanal breads, creative pastries, cakes, and Lebanese baked goods.

·Key Responsibilities:

You will work closely with The High Llama’s management to ensure smooth, high-quality production.

  • Prepare sourdough bread following The High Llama’s techniques and recipes.

  • Keep track of the daily production schedule to determine the daily and weekly production requirements.

  • Weigh, mix, scale, shape, laminate, and bake in line with the highest standards of quality.

  • Implement high hygiene standards at all times.

  • Ensure your workstations are always clean and tidy.

  • Bring and explore new baking techniques and ideas.

  • Demonstrate excellent collaboration and teamwork skills and ability to keep calm under pressure.

  • Ensure consistent record keeping and form filling (e.g. fridge temp records, issue reporting forms).

Qualifications:

  • At least three years of experience in pastry and bread baking in a professional environment.

  • Must demonstrate the right to work in the UK.

  • Fluent in English.

  • Physically healthy and fit.
